I put an oscillating fan blowing on my plants & the plants dried up. They look almost like a nutrient problem, what did I do wrong?

This usually happens when the fan is blowing on the plants to much. The leaves of the plant should just barely move when the fan turns toward them. Having the fan on oscillate helps stop the plants from getting wind burn. All the plants in the area should get air movement (if you have a plant that does not get moved when the fan passes them they will not be as strong and they will be more likely to get mold & disease problems).
